Sarah asks Ginger if she's seen her pet lizard. Ginger responds that she hasn't and asks if Sarah has checked their messages. (They then check messages and Sarah finds out her date is canceled, but the original conversation is about the pet. Don't know if that counts.)

The conversation with Ginger counts. They never talk specifically about a man, only a lizard and an answering machine.

And then there are also the conversations between Sarah and her colleague (e.g. after Sarah dropped a plate or when her colleague shows her the news about the murders on TV).

Sarah clearly has conversations, with Ginger, about stuff other than Matt.

Sarah's conversations with Ginger aren't just about Matt. They're also about "Dan."

That said, Sarah does have some brief exchanges with some of her fellow waitresses.

Which man are they talking about and why? I think if Sarah is concerned about a man dating wise, that could be sexist. If she's concerned about the man trying to kill her that's a different kettle of fish. Also, does the terminator count as a man? What about John Connor, her son?

This passes 3/3. Not sure what the controversy is. Sarah and Ginger do talk about the pet lizard. Also, when Sarah gets stood up by her date, she and Ginger discuss what Sarah will do instead - go to the movies.

"Which man are they talking about and why?"
This is an interesting question in more general discussions, but doesn't impact a Bechdel ranking. They need to talk about something other than a man, be that a romantic interest, relative, arch-enemy, etc.

And I could see the counterargument, but I would call the Terminator a man for this purpose.
